Welcome to Mama Corie's Confections. We serve up your favorite desserts and pastries in fun and unique ways--from cake pops to pie in a jar. As long as it tastes good, we'll try anything!

My name is Jessica Mattison and I co-own Mama Corie's Confections with my mom and best friend, Debbie Mattison.
I graduated from the University of North Carolina at Chapel Hill with a degree in English and intended to pursue a career in writing. Unfortunately, with the economy so poor, I was only able to find unpaid internships (I still currently work for one). The one paying job I did find was writing for an IT magazine and sadly, I was laid off after a few months. Born with a love for baking and a need of something to fill my days while endlessly searching for a career, my mom and I launched Mama Corie's Confections.
Mama Corie's Confections is an online bakery started in July 2011 in Cary, NC. We make a variety of baked goods, from cakes to pie-in-a-jar; but we are best known for our cake pops. Kids and adults alike love them as they are the perfect bite-size dessert and are virtually mess free. We offer standard, round pops as well as pops shaped like animals, flowers, and more. All
of our cake pops are baked, dipped, decorated, and packaged by hand.
While we are not the first to produce cake pops, we feel that our product stands above the rest. Our secret is our cake recipe that is the base for each of our over twenty unique flavors. We use the moistest and most flavorful pound cake you'll ever taste! The coveted recipe was handed down to me by my good friend's grandmother, Gommy; we owe her for much of our success.
Flavors of the Month: December
Eggcellent Nog: Vanilla pound cake combined with creamy egg nod frosting. It's all coated in white chocolate and topped with a dash of nutmeg.
Candy Cane Christmas: Peppermint cake with vanilla frosting mixed with bits of crushed candy cane. It's refreshingly sweet!
Gingerbells: Gingerbread cake with vanilla frosting, all coated in white chocolate and topped with crunchy gingerbread cookie crumbs.
